Badam Almond Milk Summer Cooler/Winter drink

Cold Badam Milk is a great summer cooler but if you use warm milk to make it, it's a great winter drink too! This recipe makes roughly 4 glasses of Badam Milk.

Ingredients:

  • 1 cup almonds
  • 1 cup pistachios
  • 3 cups chilled/ warm milk
  • Sugar to taste
  • 2/3 tsp cardamom powder
  • 2 tbsps kewra essence (available at Indian groceries) - optional
  • 2 tsps rose water

Preparation:

  • Grind the almonds and pistachios to a smooth paste in your food processor. Add a little milk to do this. A lot of people like to remove the skin from the almonds before grinding them. I don't do this as the skin contains many nutrients. You can do it if you wish, by soaking the almonds in hot water for 5 minutes. When soaked, press the almonds between your thumb and index finger. The skin will slip off quite easily.
  • Add the milk, sugar, cardamom powder, kewra essence (if using) and rose water. Blend well.
  • Serve chilled/ warm in a tall glass.

Mango Lassi Recipe
Recipe Type: Beverage, Mango
Cuisine: Asian
Yields: 2 servings
Prep time: 10 min

Ingredients:
1/4 cups plain low-fat yogurt
1/2 teaspoon freshly-squeezed Lemon Juice
1/2 cup fresh mango pulp*
1/3 cup cold water
1 to 2 tablespoons honey or sugar (depending on how sweet you want it)
9 to 10 standard-size ice cubes
When choosing a mango, pick one that is plump and heavy for its size. Most importantly, the mango should be fragrant when held near your nose. Canned or frozen mango may be substituted. If using sweetened mango, reduce the amount of sugar used. Allow frozen mango to thaw approximately 30 minutes before using.

Preparation:
If using a fresh mango, peel and remove the flesh from the pit; cut mango into small pieces. Also reserve and use all the juices.
In a blender, add yogurt, lemon juice, mango pulp, water, and honey or sugar. Blend approximately 2 to 3 minutes or until you see a little forming in the mixture. Add the ice and blend until frothy! NOTE: Some people like to pour the mango mixture over ice cubes instead of blending the ice cubes in the drink.
The Mango Lassi can be kept refrigerated for up to 24 hours.
Pour into glasses and enjoy!

Makes 2 servings.
